There’s something about spring that makes you want to set the table again. The light changes, the air feels softer, and suddenly a simple dinner at home feels like something worth lingering over.
A Spring Greens Dinner is one of my favorite ways to welcome the season. It’s fresh without being fussy, pretty without trying too hard, and the kind of meal that lets conversation lead instead of the food schedule.

The Mood
Think: layered greens, crisp linens, and pops of sunny blooms. This is not a “matchy” table - it’s collected, relaxed, and inviting. Choose one color story (greens are the star here) and mix patterns freely.

The Menu
A Light, Garden-Inspired Cocktail
Start the evening with something bright and simple. An elderflower spritz with prosecco, soda, and a cucumber ribbon feels celebratory without being heavy. It sets the tone for a meal that’s fresh and unfussy.
An Easy Starter
Warm herbed goat cheese with olive oil and lemon is the perfect first bite. Serve it with toasted baguette slices and let guests help themselves while you finish up in the kitchen. It feels special, but takes almost no effort.
The Salad Course
A bowl of spring greens does exactly what it should - refresh and reset the table.
Mixed baby greens, shaved fennel and cucumber, plenty of fresh herbs, and a lemon Dijon vinaigrette keep everything bright. Finish with shaved parmesan or pecorino for just enough richness.
The Main Event
For the main course, lemon and herb roasted chicken is always a crowd-pleaser. It’s comforting, familiar, and smells incredible as it comes out of the oven.
Pair it with something soft and green, like garlic butter orzo tossed with spinach. This side feel indulgent but still light enough for spring.
