For most families, including mine, the weeknights are BUSY! With homework, ball practice, PTO meetings and plenty of other commitments, dinner can feel like a fire drill. I would love to say that dinner around my house is always like an episode of Leave it to Beaver but that wouldn't be the truth. The dinner bell does not ring at precisely 6:00pm with the entire family gathering around the dining room table in their Sunday best. It is more like The Family Circus. Depending on the day, dinner can be served anytime from 6:00 - 8:00. And with the end of the school year approaching, it is busier than ever!
I love meals that I can easily prepare and place in the oven while I go tackle another chore, such as the never ending pile of laundry. Dinner is the one moment during the weekdays that all my family is together for at least half an hour. I want the meal to be special, but I don’t want to spend two hours in the kitchen instead of spending time with my family. Below is one of my go-to weeknight recipes.
